For twenty years Samuel Billaud was responsible for the family estate Domaine Billaud-Simon making excellent Chablis, before setting up his own winery in 2009. In 2014 he recovered his share of the Billaud-Simon vines which he now makes and bottles under his own self-named Domaine, with a new winery in the centre of Chablis. Now established as a top flight producer, with early picking dates and minimal use of oak, Samuel Billaud's wines taut, mineral, and classically Chablis.

"Bottled just after the harvest, the 2021 Chablis Grand Terroirs has a fragrant, quite earthy bouquet with Granny Smith apples and light estuarine scents. The palate is well-balanced with commendable depth, a crisp line of acidity and a taut and quite persistent finish. An accomplished Chablis Village. Drink 2023-2035."

"The 2021 Chablis Montmains 1er Cru, severely damaged by frost and cropped at just 15hl/ha, has a classic, "old school" Chablis nose, mean yet quite compelling. The palate is very well-balanced with a tangy, saline entry. Plenty of quintessential Chablis green fruit, this has impressive depth with a harmonious and quite linear finish. I wonder if this has even more up its sleeve? Drink 2024-2038."

"The 2021 Chablis Les Séchets 1er Cru is still obdurate and timid on the nose, tightly coiled and very pure, hints of orange blossom reluctantly emerging. The palate is very well-balanced with a saline attack, taut and fresh, lovely and poised with a malic finish that needs more persistence to develop. Give it time. Drink 2026-2042."

"The 2021 Chablis Montée de Tonnerre 1er Cru retains its serious and backward nose, very saline and still with that faint tang of kelp/Japanese nori. The palate is beautifully balanced with a keen thread of acidity, notes of orange rind and a more malic finish than I recall, yet with the same wondrous elegance and poise. This will age wonderfully in bottle and require time for the aromatics to awaken. Drink 2024-2042."

"The 2021 Chablis Vaudésir Grand Cru comes from two parcels on the east and west of the climat. Matured in three-year-old Chassin barrels, the pure bouquet has yellow plum, Granny Smiths and sea spray aromas bursting from the glass. The palate is very well-balanced with a taut opening. Fresh and vibrant with a crisp and penetrating finish, a tang of grapefruit on the aftertaste. Vrai Grand Cru! Drink 2025-2047."
