For twenty years Samuel Billaud was responsible for the family estate Domaine Billaud-Simon making excellent Chablis, before setting up his own winery in 2009.  In 2014 he recovered his share of the Billaud-Simon vines which he now makes and bottles under his own self-named Domaine, with a new winery in the centre of Chablis.  Now established as a top flight producer, with early picking dates and minimal use of oak, Samuel Billaud's wines taut, mineral, and classically Chablis.
