Tasting Notes

(from a .60 ha holding of 80+ year old vines). This is also aromatically cool and restrained with its overtly citrus-suffused aromas of ripe white orchard fruit, iodine and ocean breeze. There is borderline painful intensity to the dense, sappy and markedly stony flavors that conclude in a strikingly long, moderately dry and well-balanced finale that isn’t quite as refined yet it’s even more complex. This beauty of a Séchet is packed with potential and should prove to be especially long-lived.

The 2021 Chablis Les Séchets 1er Cru has another very backward nose and raised only in stainless steel for 18 months, this is another "serious", perhaps "mean" nose that is designed for the most purist Chablis-lovers. The palate is very well balanced with a killer line of acidity, taut and fresh with a lip-smacking saline finish that begs another sip. Only to be drunk with a large plate of fresh oysters! Quite simply, Samuel Billaud is one of the best producers in Chablis at the moment. If you have not discovered the wines, what are you waiting for?

The vines are now 80 years old, on 161/49 rootstock, but they gave a good yield, 30 hl/ha. All in tank where it will stay until next April or May. Pale colour, while the bouquet actually suggests more flesh than we expect from Séchets. Only white fruit, very pure, typically fine dry concentrated finish. Superb aftertaste. Drink from 2025-2030. Tasted: June 2022.
