Cedric Bouchard is one of Champagne's rising stars. In an approach which is revolutionary in Champagne, Bouchard seeks to create unique wines from Champagne with great character, drawing inspiration from the top Burgundy producers, rather than merely 'Champagne'. Each cuvee is made from a single vineyard, single variety and single vintage and is closer to fine Burgundy than Champagne - small, fine bubbles, bottled at low pressure with no dosage, rich, full flavours expressing the terroir of each plot, without sweetness or bubbles getting in the way. Champagne Inflorescence Val Vilaine 2009

The "basic" wine from Cedric Bouchard (Blanc de Noirs) bottled under the Inflorescence label from the small south-facing Val Vilaine vineyard following the same ideals of dry, vinous expressiveness. Opulent and mouth-filling with nervy acidity with bright apple character and hints of violets to add complexity.

100% Pinot Noir, from a vineyard called Cote de Bechelin, formerly La Parcelle. This Blanc de Noirs is delicate and refined with tiny bubbles. Fragrant black fruit and hints of earth. Rich and expressive, with purple fruit, stones, chalk and a long, long floral, dark fruit finish.

Just three rows of Pinot Noir vines at Le Creux d'Enfer provide the fruit for Bouchard's most prized offering Rosé de Saignée, "Creux d'Enfer", of which just 500 bottles are produced. Offered on allocation only. "Bouchard's rarest and most expensive Champagne, but it is worth every penny and then some" Antonio Galloni. Strawberries, minerals and incredible delicacy.
