Medium ruby. Bright aromas of dark plum, red cherry, underbrush and cocoa syrup. Smooth, ripe, and pliant, with bright acidity lifting the dark fruit flavors. The spicy, slow-mounting finish features building but even tannins. This juicy, suave wine is really irresistible. Made from 100% merlot. A touch firm, with an espresso frame holding sway over the licorice root, fig paste and blackberry notes. The espresso edge guides the finish, but there's just enough flesh to let this settle in over the short term. Merlot. Best from 2015 through 2018. The Saintayme was cropped between 15th and 16th September and is being aged in 30% new oak. It has a blackcurrant pastille scented bouquet with fine delineation, with touches of mulberry fruit underneath. The palate is medium-bodied with a rounded entry. It has a pleasant meaty tincture with a bold, slightly chunky, black olive-tinged finish that will hopefully soften by the time of bottling. Tasted April 2012.
