The 2007 Haut Bailly has a beautiful, quintessential Pessac bouquet with touches of warm gravel filtering through the black fruit. The palate is medium-bodied with impressive, tightly knit black fruit laced with cedar and white pepper. There is superb weight in this 2007 considering the vintage, doling out fine mineralité on the persistent finish. Very fine, but I would actually wait another couple of years before broaching. Tasted February 2017.

o attack from mildew – July some green harvest. A deep black/purple colour. Good intensity on the nose of plum-scented fruit with blackberries and raspberries. Very clean and ripe with good minerality. Lovely silky tannins on the palate, full-bodied, lovely mouthfeel, quite floral. Good delineation, blackberries, briary and boysenberry. Lighter on the finish but the aftertaste is evidence of the fine, physiologically ripe tannins. Touches of cedar on the finish. Very feminine for Haut-Bailly and one that should build nicely by the time of bottling.

An extremely complex bouquet of cedar, unsmoked cigar tobacco, berry fruit, and earth is followed by a medium-bodied, silky textured wine that builds incrementally, impressing the taster with its purity, overall equilibrium, and length. It is a quintessentially, elegant, flavorful wine to drink now and over the next 12-14 years.

Shows complex aromas of dark fruits, with bitter chocolate and floral notes. Full-bodied, with pretty, silky tannins. Very well-integrated and long. Builds on the palate. Best after 2013. 5,835 cases made.

Diffuse bouquet already on the nose – low key but intriguing. A hint of oak – definitely not speciously sweet. Quite succulent fruit but a very dry finish. Confident even if not especially concentrated. Dry powdery finish.

Fresh Cabernet nose with eucalyptus, mineral and smoke. Smooth and silky with lots of spicy oak, smoke and cedary notes on the finish.
