TBased on the 2018 vintage, complemented by reserve wines aged in magnum dating back to 2009, Bollinger's newly released NV Brut Blanc de Noirs PN AYC18 was disgorged this year with six grams per liter dosage. Foregrounding the village of Aÿ, a commune crucial to Bollinger's distinctive style, the wine wafts from the glass with aromas of golden orchard fruit, honeycomb, buttered toast, freshly baked bread and dried white flowers. Medium to full-bodied, pillowy and vinous, with an ample core of fruit that's girdled by lively acids and animated by an elegant pinpoint mousse, this suave, charming Champagne concludes with a chalky finish. This has turned out beautifully.

The fourth edition of Bollinger's limited PN series is the most expressive yet, with a hugely satisfying, expansive character. Dried pear, stewed Bramley apple and nectarine melt into the depths of reserve wine complexity, with chestnut honey and perfectly pitched savoury interest. It's surprisingly silky, the texture surprisingly weightless, the shape rounded and cushioned rather than strict or driving. A highly rewarding Champagne, ready to drink but with interesting potential to evolve over the next five years. 100% Pinot Noir, predominantly from Aÿ, with support from the villages of Tauxières and Verzenay. Based on the 2018 vintage, with 50% reserve wines back to 2009.

Finally, it was time for Aÿ to take center stage in Bollinger's new Pinot Noir series. It wasn't until the fourth edition that one got home to the house's most powerful stronghold and DNA. In comparison to the three previous editions, we are dealing with a tasting winner from the start. The oak notes and the home village's smoky features hit me like a wall of sauna, grilled meat, hazelnuts and tar. The color is deeper than in previous editions and the power stronger than in the first three PN. 47% of the wine comes from the home village in casks both from 2018 and in the reserve wine on magnums from 2009. In between these mighty parts we have steel tank-aged Tauxières, Avenay and Verzenay from the lighter and more mineral-influenced vintages of 2016 and 2017. This particular side takes the biggest place in the middle register and mid-palate of the wine. In aroma and aftertaste, Aÿ pushes forward with its broad muscular shoulders and leaves no one untouched. A bargain with peak 2030–2035!

PN AYC18 is a showpiece for the expansive dimensions, intoxicating allure and purity of Aÿ pinot noir; a wonderfully characterful blanc de noirs that celebrates the sumptuous fruit generosity of 2018 and the purity and precision of this fabled cru. With the generous tones of a full straw hue and a blush tint, it ripples with grand fruit depth of red cherries and perfectly ripe plums. The magnificent depth of complexity that is Bollinger rumbles in deep reserves, reminiscent of fruit mince spice and dried nectarines. I love that it is so emphatically Aÿ, so intrinsically Bollinger, and yet all transposed with the transparency and delicious fruit generosity that is 2018. It holds fantastic, succulent allure on a very long finish; the ripeness of 2018 translating in supple, silky fruit generosity, yet in no way heavy or broad, beautifully energised by the fine chalk salinity and pure acid freshness that make Aÿ such a beloved place.

The NV PN AYC 2018 is the newest edition in Bollinger’s range of single village-based Champagnes, a series of wines created by former Chef de Caves Gilles Descôtes, who passed away earlier this year. Tense and vibrant, with notable saline intensity, the AYC (based on Aÿ) sizzles with energy. Dried pear, crushed flowers, mint, sage, chalk and light pastry notes all race across the palate. This release is 53% 2018 and 47% reserve wines, a big part of which are Bollinger’s famous reserve magnums (in this case 2009 Verzenay Pinot), plus dollops of 2017 and 2016 wines. The 2018 was done in equal parts oak and tank. Dosage is 6 grams per liter, but the impression is of a slightly drier style. The combination of a very warm base vintage blended with a high proportion of reserve wines yields a Champagne of notable complexity and texture.
