The 2021 Pouilly-Fuissé Les Crays 1er Cru has a beautiful bouquet with fennel and wild mint infusing the citrus fruit. This shows nice definition and a little more intensity than the Domaine's other cuvées. The palate is well balanced with a saline entry. Bitter lemon intermixes with grapefruit and touches of spice towards the finish. This meliorates in the glass, cohering over the course of ten minutes.
