Tasting Notes

The 2017 Chablis is floral and open-knit, with a lovely perfume to match its gracious, understated personality. A wine of great subtlety and nuance, the Chablis captures all of the Dauvissat signatures. Open in its first impression and then gaining focus and energy, the 2017 offers so much at this level. Light tropical overtones add nuance to the lemon confit, orchard fruit, crushed rock and floral flavors. The 2017 is a beguiling wine in its peer group. In any peer group, really.

There is even better Chablis typicity as well as a bit more elegance to the cool, pure and airy aromas of oyster shell, lemon rind and apple. The seductively textured medium-bodied flavors possess a caressing mouth feel though the firm acid spine makes it clear that this should have no trouble aging well. This is a fine Chablis villages.

The 2017 Chablis is simply superb and about as fine an example of the appellation as it's possible to find. Offering up aromas of white currants, citrus oil, spring flowers and oyster shell, it's medium to full-bodied, satiny and layered, with superb concentration and cut, concluding with a long and lingering finish. Dauvissat explained that most of the vines that produce this cuvée face his holdings in La Fôret.

Aromas of citrus oil, white peach, spring flowers and oystershell introduce the 2017 Chablis Villages, a deep, medium to full-bodied wine with a taut, concentrated core, underpinned by a racy line of acidity. Long and chalky on the finish, like its Petit Chablis sibling, it's as good a representation of the appellation as it's possible to find.

The 2017 Chablis, of which one parcel was 80% hit by frost, has a very composed and quite intense bouquet with citrus lemon, Granny Smith apples and light smoky scents. The palate is fresh and vibrant with good tension, a clear step up from the Petit Chablis with a vibrant, spicy finish. Excellent.
