Tasting Notes

Since 2015, this estate has made a concerted effort to up the quality of their second wine, adding 4 hectares that previously went into the grand vin as well as purchasing vines on the upper plateau. I’d say it’s working, as the 2016 Aromes de Pavie certainly has a “baby Pavie” feel in its full-bodied, rich, yet elegant profile. Sporting a deep purple color as well as powerful notes of blackberries, truffle, forest floor, and tobacco, it has remarkable purity of fruit, silky tannins, and a great finish. It ranks with the top second wines in Bordeaux and is going to keep for 20-25 years. The blend is 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon and was aged in 50% new French oak.

Extremely floral and beautiful with plum and dark-berry aromas. Medium to full body, round, silky tannins and a savory finish. Second wine of Château Pavie. Drink after 2023.

The 2016 Arômes de Pavie, the second wine from Pavie, is matured in 50% new oak for 16 or 17 months. It presents a ripe, opulent bouquet of very pure kirsch, blueberry and cassis aromas, becoming more floral with aeration. The palate is medium-bodied with some wood tannin on the entry and notes of dark chocolate and tobacco infusing the black fruit. The finish is rounded and quite heady. This will require four to five years in bottle.

The 2016 Arômes de Pavie, the Deuxième Vin of Château Pavie, is a blend of 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon cropped at 42 hectoliters per hectare and matured in 50% new oak. It has a powerful and voluminous bouquet with sweet ripe black cherries, blueberry and a dash of black pepper. The palate is full-bodied with a firm grip in the mouth, a powerful and demonstrative Arômes de Pavie that just needs a little less new oak on the finish. I appreciate the weight and concentration here… it just needs to muster a little more refinement.

The 2016 Arômes de Pavie is succulent, racy and full of personality. Sweet dark cherry, plum, mocha, new leather and rose petal all grace this silky, super-expressive second wine from Pavie. In an effort to raise the quality of the Arômes, since 2015 the wine includes fruit from four hectares of vineyards on the plateau that were previously used for Pavie.

The 2016 Arômes de Pavie is a delicious second wine from Pavie. Juicy, succulent and expressive, the 2016 is showing very well today. Racy red and purplish fruit, spice and new leather flesh out in the glass. A wine with striking fruit intensity and no hard edges, the 2016 will be ready to deliver maximum pleasure pretty much upon release.
