Vin de Constance

A new chapter is being written for this historic South African estate with the exceptionally talented young winemaker Matt Day leading their relentless pursuit of perfection. Every aspect of the winemaking process is being refined and honed in order to craft a beautifully balanced, harmonious and fresh sweet wine where the sweetness is barely perceivable. Vin de Constance is made from 100% Muscat de Frontignan grapes that are harvested in the early hours of the morning to ensure optimal freshness. More passes are made through the vineyard to find berries with the perfect level of ripeness - from ripe berries with great acidity to individual raisins with intensely concentrated sugars. The impressive new winery allows for more precise vinification with lots individually vinified and then expertly blended to give the perfect balance of sugar, acid and alcohol. There are even slightly longer corks in the iconic 18th century shaped bottle to reduce oxidisation and help preserve the wonderfully precise flavours.
