New Release from Dom Perignon
Released today, we can now offer Dom Perignon - the Second Plenitude or "P2", of 1998. 1998 is the first vintage to be launched under the Plenitude concept, previously Oenotheque.
In Champagne, bottles allowed to age on the lees for longer gain additional complexity and richness before being disgorged. Richard Geoffroy, chef de cave at Dom Perignon, has observed that DP aged on its lees goes through 3 stages, not gradual changes but 3 leaps, which they call "plenitudes" or plateaus of maturity. These do not occur in the same way to Dom Perignon in bottle that has not been aged on its lees. Each Plenitude describes a different expression of the same vintage:
P1 - the first plenitude: describes the initial vintage release onto the market, after approximately 8 years. Fresh and harmonious.
P2 - the second plenitude: the stage when the vintage is judged to have reached a peak of intensity and energy, with the richness of secondary development. Released after a minimum of 12 years maturation on the lees.
P3 - the third and final plenitude: when a vintage is judged to have attained maximum complexity with tertiary character. Released after a minimum of 20 years maturation on the lees. Calm and complex. After this the wine evolves slowly and steadily.
With the recently disgorged P2-1998, the round opulence of the vintage release displays trademark DP creaminess, with butter, brioche and smoke. A magnified version, it is richer without being heavy. Broad, mouth-filling and intense with more precise flavours, and very long on the finish.
P2-1998 is a black tone on tone bottle, in contrast to the standard gold on green, that looks both serious and minimalist packaged in a sleek brushed aluminium box.
